Is it difficult to train a hunting dog like a tracker? In particular, the issue of a working dog-no, (ie: a dog house)?

I listen to a hunting dog owner who has trained his dog to track or SARS or perhaps listen to a coach. I've always wondered if the training was good only for a dog house, or people who train a dog to work? I thought about volunteering a sheriff's department or SARS acquisition.
